But all of them share the same growing and picking process when it comes to the temperature at which to pick their grapes. <\/span><\/p>\n\n\n\n

Niagara Region <\/b><\/span><\/h3>\n\n\n\n

Niagara\u2019s wine country is located at just the right latitudinal range and shares that range with Southern France, Rioja Spain and parts of Italy. This region is the perfect climate for both wine and icewine. Icewine is considered a dessert wine and a rare one at that. <\/span><\/p>\n\n\n\n

The Dessert Wine <\/b><\/span><\/h3>\n\n\n\n

Icewine, a rare dessert wine, is produced from the juice of naturally frozen grapes that have been picked in the middle the cold Canadian winter. To ensure the best results, the grapes are picked during temperatures of at least -10C. And authentic icewine is even more unique than regular dessert wines. This is because the grapes freeze and thaw between 8-10 times before they’re picked. Each time they freeze and thaw they create new and more complex flavours. <\/span><\/p>\n\n\n\n
